Here are some of the recipes I made for Easter dinner. I kept things really simple and it turned out great!
Cous Cous with feta and pine nuts
Start by measuring out a handful of pine nuts (There is no real science to this, just however many you think you would like). Start a skillet with a drizzle of olive oil and heat it up. Add the pine nuts and toss until slightly browned. Watch them, they burn quick!
To make the cous cous (I buy it loose like in the Bulk Foods section, but you can get a box if you want) Replace the water with chicken stock. It’s usually about 1 C of cous cous to 2 C broth… but that makes a lot so you can make less if you need to (it reheats good though!)
Bring chicken stock to a boil and add cous cous. Remove from heat immediately and cover. Let sit until all the liquid is soaked up.
Put into a really big mixing bowl and let cool for a minute (it will melt the feta if not). When it’s cooled a bit, add the nuts and feta (same rule for the cheese, however much you like, Scott likes a lot!) I usually transfer to a prettier serving dish.
Count on about 5-8 stalks per person, depending on your crowd. Wash the asparagus and trim the bottoms off. Lay them out flat on a cookie sheet or baking dish. Drizzle with olive oil and sprinkle with lemon pepper. Bake at 350 for 15-20 min (stick a knife in the biggest stalk to see if its soft). These are sooo good!
Flower Petal Pastries
These are my new party favorite because they are beautiful and super easy!
Buy one package of premade pie crust. Use a 3″ flower shaped (or round) cookie cutter to cut out 12 flowers from the dough. (You can flour the surface for non-stick if you need to) Place the crusts in a cupcake pan so that the petals fold up on the sides. Use a fork to poke holes in the bottom of the crusts. Bake at 350 for 20 minutes.
Later fill with your favorite fillings (yogurt and fruit for breakfast, chocolate pudding and whipped cream, custard and fresh berries, etc…)
Super easy, super cute, super yum!
