It’s been a while since I’ve blogged but it’s just because I haven’t made anything new and inspriational! However, it occured to me that maybe even it’s a super easy simple dinner it might just be enough of an idea to add something new to your weekly menu! So here was tonight’s dinner:
Lemon Chicken (with some sauce we’ll use later!)
This lemon chicken is super easy! I use frozen chicken tenders a lot, but you can use whatever chicken breasts you like -I even tossed them in the pan frozen!
Juice of One Lemon (roll in around on the counter really hard first to get a lot of juice!)
1/2 beer (my husband drinks the other half!)
a few dashes of lemon pepper
1 clove of garlic, minced
Literally, just pile all of that on the chicken and saute until cooked. I usually start it on high to get it cooked well and then cover and lower to med-low and let it simmer while I cook everything else.
Spaghetti Squash – if you don’t know what a spaghetti squash is, it’s the bright yellow sort of football sized (or like a rugby ball) squash. I only use one half for the two of us, but if you have more family then get more squash! It’s really hard to cut in half so have a big knife or a big man (or both!)
After you cut it in half, scoop out the insides (like a pumkin) and then place in a baking dish with a little bit of water in the bottom of the dish and in the middle of the squash. Cover the entire dish with saran wrap and microwave on High for 5-7 min, depending on how big it is. When it’s done, you can use a fork to scrape the insides and you will get sort of spaghetti noodle-like squash. I pour the leftover beer/lemon sauce on it and put the chicken on top. Spaghetti squash doesn’t have much of a taste, but it’s sweeter than spaghetti and less carbs!!
Steamed Spinach with garlic – super easy!
I buy the pre washed ready to eat Spinach because frankly, it’s just too much work otherwise. Use a vegetable steamer and add a glove of garlic (minced) Remember that spinach shrinks a lot so make a ton!! When it’s cooked, I sprinkle it with lemon juice and then wa la! It’s done! (Oh and i added a bit of salt!)
Chicken and Herb Ravioli with pesto – I’m a big fat cheater, this is all premade, super easy but we needed just a smidge of carbs to make sure the dinner keeps us satisfied!
Also, beginning next week I am starting the “Look Better Naked” plan! I am really excited, I bought the book – it’s written by the editor of Women’s Health Magazine and it seems like a pretty good deal! It has 6 full weeks of menus however most of them include fish, which I hate! I will try to remember to keep updating this, but the fact is with the move in 3 weeks and then not knowing when the internet will be hooked up again, I can’t promise anything!
