Okay, okay I know that’s a weird title. I only call it that because it was a perfect choice for my after-baby food needs! It really has nothing to do with having a baby, I promise there is no breastmilk in it!
The reason why this was so great for me after having Mattie is the how easy it was. Most of the time, I am trying to eat before he wakes up or get something to eat while bouncing him in the other hand. Having a bunch of chicken salad pre-made in the fridge was great. I could slap it on some bread, eat it with some crackers or just eat it out of the dish with a fork.
I made a huge batch and gave half to my friend who also just had a baby. And it’s one of those “no measurement” recipes I am so fond of!
So here we go:
– canned chicken
– a couple spoons of mayo
– a handful of dried cranberries, walnuts and chopped celery
Mix it up and add a bit of salt and pepper. Wa – la! Lunch for a week and so easy to grab and chow!
